Baked Oatmeal with Apples and Bananas

Ingredients

  • 3 cups apples approximately 2 medium, any variety, cut into ½ inch pieces, peeled or unpeeled
  • 1 medium ripe banana approximately ½ cup
  • 1 cup milk any kind
  • 1 large egg
  • ¼ cup pure maple syrup or honey
  • ¼ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup whole rolled oats uncooked
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ teaspoon ground cinnamon divided
  • 1/8 teaspoon ground nutmeg
  • ¼ cup chopped walnuts

Instructions

  • Preheat oven to 375F. Grease a 9x9 baking dish.
  • Place the cut apples in a single layer in the prepared baking dish. Sprinkle the apples with ¼ teaspoon of ground cinnamon. Cover with foil.
  • Bake for 10 minutes.
  • Meanwhile, in a medium bowl, smash the banana with a fork. Make sure there are no large chunks left. Add the milk, egg, maple syrup, applesauce, and vanilla. Whisk until completely combined.
  • Add the oats, baking powder, salt, 1 teaspoon cinnamon, and nutmeg. Mix until fully combined.
  • Remove the baking dish of apples from the oven. Pour the oat mixture over the baked fruit, ensuring it is even throughout the dish.
  • Sprinkle the walnuts on the top.
  • Bake, uncovered, for 35-40 minutes, or until it’s golden brown.
  • Serve warm.

Notes

Keep leftovers refrigerated for up to 5 days.
Reheat individual portions in the microwave.
