Set the oven to broil. Split each pita into 2 rounds. *See Tidbits section above for photos. Place pitas on a baking sheet. Broil each side for 1-2 minutes, until each side is crisp and golden brown. Be careful as they can brown very quickly. Set pitas aside.
In a large skillet, heat oil on medium heat. Add onion and sauté until onions become translucent, about 2 minutes.
Add garlic and cook until fragrant, about 30 seconds. Add ground beef and cook until browned. Breaking it up into pieces as it cooks, about 3-5 minutes.
Add cumin, oregano, salt, cinnamon, basil, and pepper. Mix until beef mixture is fully coated.
Add the lemon juice and half of the tomatoes and cilantro (reserving the other half for topping the pitas). Stir to combine and simmer for 3 minutes, until the tomatoes begin to soften and the lemon juice has been absorbed. Remove skillet from heat.
Spread each pita round with hummus then top with meat mixture.
Top pitas with the reserved fresh tomatoes and cilantro. Add your favorite toppings; tzatziki, feta, olives etc.
