3cupsapplesapproximately 2 medium, any variety, cut into ½ inch pieces, peeled or unpeeled
1medium ripe bananaapproximately ½ cup
1cupmilkany kind
1large egg
¼cuppure maple syrup or honey
¼cupunsweetened applesauce
1teaspoonvanilla extract
1cupwhole rolled oatsuncooked
1teaspoonbaking powder
¼teaspoonsalt
1 ¼teaspoonground cinnamondivided
1/8teaspoonground nutmeg
¼cupchopped walnuts
Instructions
Preheat oven to 375F. Grease a 9x9 baking dish.
Place the cut apples in a single layer in the prepared baking dish. Sprinkle the apples with ¼ teaspoon of ground cinnamon. Cover with foil.
Bake for 10 minutes.
Meanwhile, in a medium bowl, smash the banana with a fork. Make sure there are no large chunks left. Add the milk, egg, maple syrup, applesauce, and vanilla. Whisk until completely combined.
Add the oats, baking powder, salt, 1 teaspoon cinnamon, and nutmeg. Mix until fully combined.
Remove the baking dish of apples from the oven. Pour the oat mixture over the baked fruit, ensuring it is even throughout the dish.
Sprinkle the walnuts on the top.
Bake, uncovered, for 35-40 minutes, or until it’s golden brown.
Serve warm.
