Baked apples scream fall to me. I love the warm spices paired with fresh fruit. I would eat this over any pumpkin food any day! Oatmeal is one of my kiddos favorite breakfast foods. It was actually my daughter’s favorite food for a long time. She would even request it as her birthday breakfast. So I knew it was about time to recreate my go-to banana oatmeal recipe.
This baked oatmeal uses smashed bananas and maple syrup to sweetened it and applesauce to keep it moist! If you are into meal prepping, this recipe is prefect! I will make a batch, let it cool on the counter, and then split it into separate containers. I warm an individual serving in the microwave for 1 minute. The end of the week batch is just as good as the first!
Tidbits
Oats– Whole old-fashioned oats is what I use. I’m not sure if quick oats will work the same. You may need to cut down the cooking time if using quick oats.
Apples- Any variety of apple will work. Use your favorite! I don’t peel my apple, but you definitely can if you prefer.
Baked Oatmeal with Apples and Bananas
Ingredients
- 3 cups apples approximately 2 medium, any variety, cut into ½ inch pieces, peeled or unpeeled
- 1 medium ripe banana approximately ½ cup
- 1 cup milk any kind
- 1 large egg
- ¼ cup pure maple syrup or honey
- ¼ cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup whole rolled oats uncooked
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 ¼ teaspoon ground cinnamon divided
- 1/8 teaspoon ground nutmeg
- ¼ cup chopped walnuts
Instructions
- Preheat oven to 375F. Grease a 9x9 baking dish.
- Place the cut apples in a single layer in the prepared baking dish. Sprinkle the apples with ¼ teaspoon of ground cinnamon. Cover with foil.
- Bake for 10 minutes.
- Meanwhile, in a medium bowl, smash the banana with a fork. Make sure there are no large chunks left. Add the milk, egg, maple syrup, applesauce, and vanilla. Whisk until completely combined.
- Add the oats, baking powder, salt, 1 teaspoon cinnamon, and nutmeg. Mix until fully combined.
- Remove the baking dish of apples from the oven. Pour the oat mixture over the baked fruit, ensuring it is even throughout the dish.
- Sprinkle the walnuts on the top.
- Bake, uncovered, for 35-40 minutes, or until it’s golden brown.
- Serve warm.

Reheat individual portions in the microwave.
